A delightful and crunchy snack made from roasted chickpeas, infused with garlic, lemon, and parmesan.

Ingredients

  • 15 oz chickpeas
  • 1.5 tbsp olive oil
  • 3/4 tsp garlic powder
  • 3/4 tsp lemon zest
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp parmesan cheese
  • 1/4 tsp smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain the chickpeas and rinse them thoroughly under cold water.
  3. Pat the chickpeas dry with a kitchen towel.
  4. Whisk together olive oil, garlic powder, lemon zest, salt, black pepper, and smoked paprika in a mixing bowl.
  5. Add the dried chickpeas to the bowl and toss them until they are well-coated with the spice mixture.
  6. Spread the coated chickpeas in a single layer on a baking sheet.
  7. Bake for 20-25 minutes, stirring halfway through, until they are golden and crispy.
  8. Remove from the oven and immediately sprinkle the finely grated Parmesan cheese over the hot chickpeas.
  9. Allow them to cool slightly before serving.

Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
