A delightful representation of Indian street food, these paneer puffs feature a flaky crust filled with a spicy paneer mixture.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cold butter, cubed
  • 1/2 cup cold water
  • 1/2 teaspoon salt
  • 1 cup crumbled paneer
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 tablespoon chopped coriander leaves
  • Salt to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Mix the all-purpose flour and salt in a large bowl.
  2. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Pour in the cold water little by little until the dough forms.
  4. Knead the dough briefly on a floured surface until smooth, then wrap in plastic wrap and refrigerate for 30 minutes.
  5. Heat oil in a pan over medium heat and add cumin seeds.
  6. Sauté for a minute until fragrant.
  7. Add the crumbled paneer, followed by garam masala, turmeric powder, red chili powder, and salt. Stir to combine.
  8. Remove from heat and mix in the chopped coriander leaves. Allow to cool.
  9. Preheat your oven to 400°F (200°C).
  10. Roll out the chilled dough on a floured surface into thin rectangles.
  11. Cut the rolled dough into squares, about 4 inches on each side.
  12. Place a spoonful of the paneer mixture in the center of each square.
  13. Fold the dough over to create triangles and press the edges to seal.
  14. Brush the tops with beaten egg for a golden finish.
  15. Bake for 20-25 minutes or until golden brown and puffed up.

Notes

Chill the dough to ensure a flaky texture and don’t overfill the puffs.
