  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup tequila
  • 1/4 cup fresh lime juice
  • 1 tsp lime zest
  • 1/2 cup grapefruit juice
  • 1/4 cup milk
  • 1/2 tsp vanilla extract
  • Tequila frosting (buttercream with tequila and lime to taste)
  • Lime and grapefruit slices for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the softened butter and sugar in a large mixing bowl until light and fluffy.
  4. Beat in the eggs one at a time, then add the tequila, lime juice, lime zest, grapefruit juice, milk, and vanilla extract, mixing until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill the cupcake liners about 2/3 full with batter and bake for 18-20 minutes until a toothpick comes out clean.
  7. Let the cupcakes cool completely before frosting with tequila buttercream.
  8. Garnish with lime and grapefruit slices before serving.
