Ingredients

  • 1 cup almond flour
  • 2 large eggs
  • 1/4 cup coconut milk
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine almond flour, baking powder, and salt.
  2. In another bowl, whisk together eggs, coconut milk, honey or maple syrup, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with your favorite toppings.

Notes

  • For a fluffier pancake, let the batter sit for a few minutes before cooking.
  • These pancakes can be stored in the refrigerator for up to 3 days.
  • Top with fresh fruit or nut butter for added flavor.
