Delightful mini cheesecakes with a crunchy Oreo base and creamy filling, perfect for any occasion.

Ingredients

  • 15 Oreo cookies, crushed
  • 2 cups cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Chocolate shavings or crushed Oreos for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Combine crushed Oreo cookies and a few tablespoons of melted butter to make a crumb base.
  3. Press the mixture into the bottom of each cupcake liner.
  4. Beat the cream cheese, sugar, and vanilla extract in a mixing bowl until smooth.
  5. Whip the heavy cream in another bowl until stiff peaks form, then fold it into the cream cheese mixture.
  6. Spoon the cheesecake filling over the Oreo crust in the muffin tin, filling each liner almost to the top.
  7. Refrigerate for at least 2 hours or until set.
  8. Top with chocolate shavings or crushed Oreos before serving.

Ensure cream cheese is at room temperature for the best results. You can use sugar substitutes for a diabetes-friendly version.
