  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans (15 oz, drained and rinsed)
  • 2 cups chicken or vegetable broth
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat until fully cooked.
  2. Add the taco seasoning and stir to combine.
  3. Pour in the diced tomatoes, black beans, corn, and broth.
  4. Bring the mixture to a boil, then add the pasta.
  5. Reduce heat and simmer, stirring occasionally, until the pasta is cooked and the liquid is mostly absorbed.
