A comforting one-pot version of the classic Italian lasagna with layers of savory beef, creamy cheeses, and zesty tomatoes, perfect for a stress-free family dinner.

Ingredients

  • 9 lasagna noodles
  • 1 pound ground beef or Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Brown the ground beef or sausage over medium heat in a large skillet. Add the diced onion and minced garlic, cooking until the onion is translucent.
  2. Break the lasagna noodles into halves and add them to the skillet along with the crushed tomatoes and Italian seasoning. Stir to combine and ensure the noodles are submerged in the sauce. Bring to a simmer, cover, and cook for about 20 minutes, stirring occasionally, until the noodles are tender.
  3. Stir in the ricotta cheese, half of the mozzarella, and half of the Parmesan. Mix until well incorporated.
  4. Sprinkle the remaining mozzarella and Parmesan on top, cover, and let it simmer for an additional 5-10 minutes until the cheese is melted and bubbly.
  5. Garnish with fresh basil if desired and serve warm.

Notes

Great for meal prep and can be customized with additional vegetables. Store leftovers in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months.
