  • 3/4 cup unsalted butter (168 grams), softened (for frosting)
  • 2 ounces cream cheese (57 grams), full-fat, brick style
  • 3-4 cups powdered sugar (330-440 grams)
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 teaspoon salt (for frosting)
  • 1 tablespoon cream (if needed for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the 1 cup unsalted butter, 1 cup brown sugar, and 1/2 cup granulated sugar until fluffy.
  3. Add the molasses and 2 teaspoons vanilla extract, mixing until combined.
  4. Crack in the 2 large eggs, one at a time, ensuring the mixture is well blended.
  5. Whisk together the 2 cups all-purpose flour, 1/2 teaspoon cinnamon, 1 teaspoon baking soda, and 1/4 teaspoon salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Fold in the 3 cups quick oats until evenly distributed.
  8. Scoop heaping tablespoons of dough onto a prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges turn golden brown.
  10. Remove from the oven and cool on a wire rack.
  11. In a mixing bowl, beat the 3/4 cup unsalted butter and 2 ounces cream cheese until smooth for the frosting.
  12. Gradually add the powdered sugar, 1 teaspoon vanilla extract, and 1/4 teaspoon salt, beating until fluffy.
  13. Add 1 tablespoon cream if necessary to achieve desired spreadability.
  14. Pair two cookies together, flat sides facing each other, and spread frosting on one cookie before topping with the other.
  15. Repeat with remaining cookies and frosting.
