A delicious dip made from roasted zucchini and tahini, encapsulating the essence of Middle Eastern warmth and tradition.

Ingredients

  • 2 medium zucchinis
  • 1/2 cup tahini
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the zucchinis in half and roast them for about 20 minutes until tender.
  2. Allow them to cool and scoop out the flesh into a bowl.
  3. In a food processor, combine the roasted zucchini, tahini, garlic, olive oil, lemon juice, and salt. Blend until smooth and creamy.
  4. Taste and adjust seasoning if necessary.
  5. Transfer to a serving bowl and garnish with parsley. Serve with pita bread or vegetables.

Notes

Store in an airtight container for up to 4 days in the refrigerator or freeze for up to 3 months. Serve at room temperature or gently heat with a splash of olive oil.
