  • 4 cups vegetable broth
  • 2 cups mushrooms, sliced

  • 2 cloves garlic, minced
  • 1 cup shredded cheese (optional)

Instructions

  1. In a pot, bring the vegetable broth to a boil.
  2. Slowly whisk in the polenta, stirring constantly until thickened.
  3. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  4. Add sliced mushrooms and cook until browned.
  5. Combine the mushroom mixture with the polenta and season with salt and pepper.
  6. Transfer the mixture to a baking dish and top with shredded cheese if desired.
  7. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes.
