  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup dark chocolate, melted
  • 1/2 cup milk chocolate, melted
  • 1/2 cup white chocolate, melted
  • 1 cup chocolate cookie crumbs
  • 2 tablespoons unsalted butter, melted
  • Chocolate shavings or chips for garnish

Instructions

  1. Preheat your oven to 325°F (163°C) and line a muffin tin with cupcake liners.
  2. Mix cookie crumbs and melted butter in a bowl until well combined. Press this mixture into the bottom of each liner.
  3. Beat the cream cheese, sugar, and vanilla in another bowl until smooth.
  4. Add the sour cream and mix well.
  5. Divide the mixture into three bowls. To one, add the melted dark chocolate; to the second, add the milk chocolate; and to the third, add the white chocolate.
  6. Layer each type of cheesecake batter into the liners, starting with dark chocolate, then milk chocolate, and finally white chocolate.
  7. Bake for 15-20 minutes until set.
  8. Allow to cool, then refrigerate for at least 2 hours.
  9. Garnish with chocolate shavings or chips before serving.
