Delightful roasted mini bell peppers, infused with balsamic, garlic, and olive oil, make for a vibrant and healthy side dish.

Ingredients

  • 1 lb Mini bell peppers
  • 2 tbsp Balsamic vinegar
  • 2 tbsp Olive oil
  • 2 cloves Fresh garlic, minced
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the mini bell peppers with balsamic vinegar, olive oil, minced garlic, salt, and pepper in a mixing bowl.
  3. Spread the peppers out on a baking sheet.
  4. Roast in the oven for 15-20 minutes, until they are tender and slightly caramelized.
  5. Serve warm as a side dish or appetizer.
