Ingredients

  • 1 pound gnocchi
  • 2 cups corn (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime (juiced)
  • 1/2 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the gnocchi according to package instructions until they float. Drain and set aside.
  2. Add the corn to a large skillet and cook over medium heat until lightly charred, about 5 minutes.
  3. Mix together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a bowl.
  4. Combine the cooked gnocchi with the corn in the skillet. Pour the sauce over and toss to combine.
  5. Remove the skillet from heat and stir in the crumbled cotija cheese.
  6. Serve warm, garnished with fresh cilantro.
