A vibrant and delicious salad featuring creamy avocados, black beans, sweet corn, and fresh vegetables, perfect for summer gatherings or healthy meals.

Ingredients

  • 2 ripe avocados, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sweet corn (canned or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Combine in a large bowl the diced avocados, black beans, sweet corn, red bell pepper, and red onion.
  2. Whisk together in a small bowl the lime juice, cilantro, salt, and pepper for the dressing.
  3. Pour the dressing over the salad and gently toss everything together until combined.
  4. Serve immediately or chill in the refrigerator for a short time before serving.
