  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes
  • 1 cup Kalamata olives
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine the chicken breasts, cherry tomatoes, olives, red onion, and garlic in a large bowl.
  3. Drizzle with olive oil, and sprinkle with oregano, basil, salt, and pepper.
  4. Toss everything until the chicken is well coated.
  5. Transfer the mixture to a baking dish.
  6. Bake for 25-30 minutes, or until the chicken is cooked through.
  7. Garnish with fresh parsley before serving.

For deeper flavor, marinate the chicken in olive oil, garlic, and herbs for a few hours before cooking.
