A comforting Italian dish featuring tender meatballs served over creamy polenta, perfect for family gatherings.

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 1 cup polenta
  • 4 cups water
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper in a large bowl. Mix until well combined.
  2. Form mixture into meatballs and place on a baking sheet.
  3. Bake meatballs in a preheated oven at 400°F (200°C) for 20-25 minutes, or until cooked through.
  4. Bring water to a boil in a saucepan. Whisk in polenta slowly and reduce heat to low. Cook, stirring frequently, for about 15-20 minutes until thickened.
  5. Stir in shredded mozzarella until melted and creamy.
  6. Heat marinara sauce in a separate pot until warm.
  7. Serve meatballs over creamy polenta, topped with marinara sauce.

Notes

For added flavor, consider sautéing the garlic in olive oil before mixing it into the meatball mixture.
