  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • Powdered sugar for dusting (optional)

Instructions

  1. Prepare the pan: Grease and flour a madeleine pan to prevent sticking. Preheat oven to 375°F (190°C).
  2. Mix dry ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Whisk eggs and sugar: In a separate bowl, beat the eggs and sugar together until pale and slightly thickened (about 3-5 minutes).
  4. Add flavorings: Stir in vanilla extract and lemon zest.
  5. Incorporate dry ingredients: Gently fold in the dry ingredients, being careful not to overmix.
  6. Add butter: Gradually fold in the melted butter until fully combined.
  7. Chill the batter: Cover and refrigerate for at least 30 minutes to allow the batter to rest (optional but recommended).
  8. Bake: Spoon batter into the prepared madeleine pan, filling each mold about 3/4 full. Bake for 9-10 minutes until edges are golden brown and the centers spring back when lightly pressed.
  9. Cool and serve: Let the madeleines cool in the pan for a minute before transferring them to a wire rack. Dust with powdered sugar if desired. Serve warm or at room temperature with tea or coffee.
