Ingredients

Scale
  • 1 cup warm 2% milk
  • 2 1/2 teaspoons instant dry yeast
  • 2 large eggs
  • 1/2 cup salted butter, melted
  • 1 teaspoon salt
  • 1 tablespoon poppy seeds
  • 1/2 cup granulated sugar
  • 4 – 4 1/2 cups bread flour
  • 10 ounces lemon curd
  • 1/2 cup heavy cream
  • 1 1/2 cups powdered sugar
  • 1 tablespoon salted butter, melted
  • 1-2 tablespoons fresh lemon juice
  • 1-2 tablespoons heavy cream

Instructions

  1. Pour the warm milk in the bowl of a stand mixer and sprinkle the yeast overtop.
  2. Add the eggs, melted butter, salt, poppy seeds, and sugar.
  3. Mix in 4 cups of flour just until barely combined and let rest for 5 minutes.
  4. Scrape the dough off the beater and attach the dough hook.
  5. Beat the dough on medium speed, adding more flour if necessary, until elastic and smooth.
  6. Place the dough in a greased bowl, cover, and let it rise until nearly double.
  7. Roll out the dough into a rectangle and spread lemon curd on top.
  8. Roll the dough tightly, slice into 12 pieces, and place in a greased baking pan.
  9. Let them rise for 20 minutes. Preheat oven to 375°F.
  10. Pour heavy cream over the rolls and bake for 25-27 minutes until golden brown.
  11. Prepare glaze by mixing powdered sugar, melted butter, lemon juice, and cream.
  12. Drizzle glaze over cooled rolls.

Notes

Use fresh ingredients for the best flavor and allow the dough to rise in a warm, draft-free area for optimal puffiness.
