  • 1 egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Beat together the softened butter and granulated sugar in a large bowl until light and fluffy.
  3. Add the egg, lemon zest, and lemon juice, mixing until well combined.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Scoop tablespoon-sized amounts of the dough and roll them into balls.
  8. Roll each ball in powdered sugar to coat.
  9. Place the sugar-coated balls onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes or until the edges are set but the centers are still slightly soft.
  11. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
