Delicious Lemon Butter Salmon with Crispy Potatoes & Broccoli

Ingredients

  • 4 skin-on salmon fillets (about 6 ounces each)
  • 2-3 medium Russet or Yukon Gold potatoes, cut into ¾ to 1 inch pieces
  • 1 head of fresh broccoli, cut into florets
  • 4 tablespoons unsalted butter
  • 2 fresh lemons, juiced and zested
  • 3-4 cloves garlic, minced
  • 2-3 tablespoons olive oil
  • ½ teaspoon coarse sea salt
  • ¼ teaspoon freshly ground black pepper
  • Pinch of dried dill or fresh parsley (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Toss the potato pieces with 1-2 tablespoons of olive oil, ½ teaspoon of salt, and ¼ teaspoon of black pepper on a large baking sheet. Spread them out in a single layer and roast for 15 minutes.
  2. Toss the broccoli florets with 1 tablespoon of olive oil, ¼ teaspoon of salt, and a pinch of black pepper in a medium bowl. After 15 minutes of roasting the potatoes, add the seasoned broccoli florets to the baking sheet and return to the oven for another 15-20 minutes, until the potatoes are golden brown and broccoli is tender.
  3. Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.
  4. Melt 4 tablespoons of unsalted butter over medium-low heat in a small saucepan. Stir in the minced garlic, the juice of half a lemon, and the lemon zest. Season with a pinch of salt and pepper to taste.
  5. Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat. Place the salmon fillets, skin-side down, into the skillet and sear for 4-5 minutes until the skin is crispy.
  6. Carefully flip the salmon fillets and transfer the skillet to the oven with the vegetables. Cook for an additional 5-8 minutes, or until the salmon is cooked through.
  7. Remove everything from the oven and drizzle the warm lemon butter sauce over the salmon. Serve immediately with the crispy potatoes and broccoli on the side.

Notes

For the best flavor, opt for wild-caught salmon when possible. Let the salmon rest for a couple of minutes after cooking for a juicier result.
