Delightful breakfast waffles combining tart lemon and sweet blueberries for a flavorful experience.

Ingredients

  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon zest
  • 1 3/4 cup all-purpose flour
  • 1 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cup milk
  • 1 tablespoon lemon juice
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 stick unsalted butter (melted and slightly cooled)
  • 1 cup blueberries
  • Nonstick cooking spray (oil or melted butter)
  • Maple syrup
  • Powdered sugar
  • Whipped cream

Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions.
  2. Combine the sugar and lemon zest in a large bowl and rub the mixture with your fingertips.
  3. Add flour, baking powder, baking soda, and salt to the bowl and set aside.
  4. In another bowl, whisk together milk, lemon juice, eggs, and vanilla.
  5. Whisk the wet mixture into the flour mixture until a batter forms.
  6. Whisk in melted butter until just incorporated.
  7. Fold in blueberries.
  8. Spray the preheated waffle iron with nonstick spray.
  9. Pour batter into the waffle iron and cook until golden brown, about 3-5 minutes.
  10. Repeat with remaining batter.
  11. Serve with maple syrup, powdered sugar, or whipped cream.

Notes

For sugar substitutes, consider using stevia, monk fruit, or allulose.
