A vibrant and refreshing pasta salad filled with lemon, asparagus, and fresh vegetables, perfect for spring gatherings and picnics.

  • 8 oz pasta (fusilli or rotini)
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup fresh lemon juice
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. Blanch the asparagus in a large pot of boiling water for 2-3 minutes until bright green and tender-crisp. Drain and rinse under cold water.
  3. Combine the pasta, asparagus, cherry tomatoes, and red onion in a large bowl.
  4. Mix together the lemon juice, mayonnaise, Greek yogurt, salt, and pepper in a small bowl.
  5. Pour the dressing over the pasta salad and toss to coat.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Garnish with fresh parsley before serving.
