A refreshing dessert combining tangy key lime and creamy yogurt, reminiscent of sunny shores.

Ingredients

  • 2.5 cups Greek yogurt (plain, non-fat or low-fat)
  • 3.5 tbsp key lime juice
  • 2 tbsp powdered swerve (or 1 tbsp honey)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 1/3 cup crushed gluten-free graham crackers
  • 1/4 cup toasted coconut (unsweetened)
  • 1 scoop vanilla protein powder (regular or dairy-free)

Instructions

  1. Combine the Greek yogurt, key lime juice, protein powder, lime zest, powdered swerve, and vanilla extract in a medium mixing bowl. Mix until smooth and well combined.
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Spread the yogurt mixture evenly over the prepared baking sheet, creating a thin, even layer.
  4. Sprinkle the crushed graham crackers, toasted coconut, and lime zest evenly over the yogurt layer.
  5. Place the baking sheet in the freezer for at least 120-180 minutes, or until the yogurt mixture is fully frozen and set.
  6. Remove the baking sheet from the freezer.
  7. Lift the parchment paper or silicone mat from the baking sheet and break the frozen yogurt bark into pieces.
  8. Enjoy immediately or store the bark pieces in an airtight container in the freezer for up to 14 days.

Notes

Consider adding fresh fruit or nuts for additional texture. Adjust sweetness according to taste.
