A vibrant and refreshing slaw featuring jicama, crunchy vegetables, and a zesty dressing.

Ingredients

  • 1 large jicama, peeled and julienned
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/2 cup chopped cilantro
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey or agave syrup
  • Salt and pepper to taste

Instructions

  1. Combine jicama, carrots, bell pepper, and cilantro in a large bowl.
  2. Whisk together lime juice, olive oil, honey, salt, and pepper in a separate small bowl.
  3. Pour the dressing over the veggie mixture.
  4. Toss until well coated.
  5. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

This slaw tastes even better after a few hours in the fridge! For a sugar-free alternative, use stevia, monk fruit, or allulose instead of honey.
