A hearty and flavorful chili that’s perfect for topping hot dogs or enjoyed on its own. A versatile dish that brings comfort and satisfaction to every meal.

Ingredients

  • 1 small onion, diced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 (6-oz) can tomato paste
  • 2 cups water
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper (or to taste)
  • 1 lb lean ground chuck (90/10 or leaner)

Instructions

  1. Sauté onions in oil (just enough to cook them in) over medium heat in a saucepan for 5 minutes or until golden.
  2. Add garlic and continue cooking for 2 minutes.
  3. Add tomato paste then stir and cook for 2-3 minutes or until the paste just starts to brown on the bottom of the pan.
  4. Add water then stir well to deglaze the pan.
  5. Add chili powder and remaining spices then whisk until smooth.
  6. Add ground beef then stir the meat into the liquid with a whisk or fork.
  7. Bring to a low boil once the meat and sauce are uniformly combined.
  8. Cover and simmer for 30 minutes over low heat, stirring occasionally.
  9. Remove lid then continue simmering, uncovered, for 30 additional minutes or until chili has reached desired thickness.
  10. Cover and keep warm until ready to serve.

Notes

For a lower sugar option, consider using sugar substitutes like stevia or monk fruit. You can also adjust the spice level by adding more cayenne pepper.
