  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in the honey, melted coconut oil, and vanilla extract until well combined.
  4. Sprinkle the baking soda and salt over the mixture and mix in.
  5. Add the flour and stir until just incorporated. Do not overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Use overripe bananas for the best flavor. Allow bread to cool completely before slicing.
