A delightful side dish combining sweet honey and rich butter with fresh corn kernels.

  • 2 lbs (900g) Frozen Gold Corn
  • 1/2 cup (115g) Salted Butter
  • 2 tbsp (42g) Raw Honey
  • 4 oz (115g) Cream Cheese, softened and cubed
  • 1/4 cup (60ml) Heavy Cream
  • 1/2 tsp Cracked Black Pepper
  • 1/2 tsp Salt
  • 2 tbsp (6g) Fresh Green Chives, finely chopped for garnish

Instructions

  1. Prepare the Honey Butter Base: In a large skillet over medium heat, melt the salted butter until it’s fully liquefied.
  2. Add the raw honey to the melted butter, stirring gently until well combined and the mixture is aromatic.
  3. Incorporate the frozen corn into the skillet, mixing well to coat it with the honey butter base.
  4. Cook for about 5-7 minutes, stirring occasionally, until the corn is heated through and just starts to caramelize slightly.
  5. Stir in the cubed cream cheese, allowing it to melt and combine with the corn.
  6. Pour the heavy cream into the skillet, mixing thoroughly until the mixture is creamy and velvety in texture.
  7. Season with cracked black pepper and salt to taste, adjusting according to your preference.
  8. Garnish with finely chopped fresh green chives for a pop of color and freshness.

Notes

Use fresh corn for the best flavor and avoid overcooking the cream cheese to prevent a grainy texture.
