Warm, gooey chocolate chip cookies that are gluten-free with crispy edges and chewy centers.

Ingredients

  • 1 cup gluten-free flour blend
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the butter and sugars in a bowl until smooth.
  3. Beat in the egg and vanilla until combined.
  4. Mix the flour, baking soda, and salt, then fold it into the wet mixture.
  5. Stir in the chocolate chips.
  6. Drop spoonfuls of dough onto a baking sheet.
  7. Bake for 10-12 minutes until edges are golden.
  8. Let cool on the baking sheet before transferring to a wire rack.
