- 1 cup pumpkin puree
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree, honey (or maple syrup), melted coconut oil, and vanilla extract.
- In another bowl, combine the rolled oats, almond flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
- If using, fold in the dark chocolate chips.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
