  • 1 cup gluten-free breadcrumbs
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 cup ketchup (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground turkey or chicken, gluten-free breadcrumbs, onion, bell pepper, garlic, parsley, eggs, applesauce, salt, pepper, and thyme.
  3. Mix until well combined.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
  5. Spread ketchup on top of the meatloaf.
  6. Bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Let it rest for 10 minutes before slicing and serving.
