  • 2 Zucchini
  • 1 Eggplant
  • 1 Red onion
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • Herbs (like thyme or rosemary) to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Wash and cut the vegetables into bite-sized pieces.
  3. Combine the vegetables with olive oil, salt, pepper, garlic powder, and herbs in a bowl. Toss to coat evenly.
  4. Place the vegetables on the grill and cook for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.
  5. Remove from the grill and serve warm.
