A comforting green broth filled with shredded chicken, hominy, and vibrant tomatillos, ideal for family gatherings and festive occasions.

Ingredients

  • 2 cups shredded chicken
  • 2 cans hominy, drained and rinsed
  • 4 tomatillos, husked and chopped
  • 2 green chiles, chopped
  • 6 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Toppings: diced radishes, chopped cilantro, lime wedges, avocado, and tortilla chips

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, cooking until softened.
  3. Add tomatillos and green chiles, and cook for a few minutes until they start to soften.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the shredded chicken and hominy, followed by cumin, salt, and pepper.
  6. Let it simmer for about 30 minutes for the flavors to meld.
  7. Serve hot with your favorite toppings.

Notes

For a vegetarian version, substitute chicken with mushrooms and use vegetable broth. Use fresh ingredients for the best flavor.
