Green Chicken Pozole

A rich and hearty pozole filled with tender chicken, hominy, and a vibrant green sauce made from tomatillos and chilies.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 lb chicken breast or thighs
  • 1 can hominy, drained and rinsed
  • 4 cups chicken broth
  • 1 tsp cumin
  • 0.5 tsp oregano
  • Salt, to taste
  • Black pepper, to taste
  • 1 lb tomatillos, husked
  • 2 green chilies
  • 0.5 onion
  • 2 cloves garlic
  • 1 cup cilantro
  • 0.5 cup water
  • 1 lime, juiced

Instructions

  1. Boil tomatillos and green chilies until softened, then blend with onion, garlic, cilantro, lime juice, and water to create a green sauce.
  2. Sauté chopped onion and minced garlic in olive oil in a large pot until fragrant.
  3. Add the green sauce to the pot and cook for 5 minutes.
  4. Stir in the chicken, chicken broth, hominy, cumin, oregano, salt, and black pepper.
  5. Simmer until the chicken is cooked through, then shred the chicken and return it to the pot.
  6. Simmer for an additional 10 minutes, then serve with your choice of toppings.

Notes

For a vegetarian version, substitute chicken with beans or mushrooms. Adjust the level of spice by choosing different chilies.
