Delightful and nutritious blondie brownies made with Greek yogurt and almond flour.

Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup almond flour
  • 1/2 cup brown sugar
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Combine Greek yogurt, brown sugar, melted coconut oil, and vanilla extract in a mixing bowl until smooth.
  3. Mix almond flour, baking powder, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in chocolate chips.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before cutting into squares and serving.

Notes

Store leftovers in an airtight container for up to 5 days. Freezing individually wrapped squares for up to 3 months is also an option.
