  • 1/2 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 teaspoon salt
  • 4 ripe peaches, sliced
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix gluten-free flour, melted coconut oil, maple syrup, and salt until a dough forms.
  3. Press the dough into a tart pan evenly.
  4. In another bowl, combine sliced peaches, cornstarch, lemon juice, and vanilla extract.
  5. Pour the peach mixture into the tart crust.
  6. Bake for 30-35 minutes or until the crust is golden and the peaches are tender.
  7. Let it cool before serving.
