  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/4 cup dried cranberries
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the gluten-free flour, oats, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips, dried cranberries, and nuts if using.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Remove from the oven and let cool for a few minutes before transferring to a wire rack.
  10. Decorate with sprinkles while still warm if desired.
