Delicious and healthy pumpkin bars that are both gluten-free and vegan, perfect for fall.

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 cup gluten-free flour blend
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup vegan chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine pumpkin puree, almond butter, and maple syrup until smooth.
  3. In another bowl, whisk together gluten-free flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  5. If using, fold in the vegan chocolate chips.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Allow to cool before cutting into bars.

Notes

  • Store leftovers in an airtight container in the fridge.
  • These bars can be frozen for longer storage.
