Delicious homemade pop tarts filled with a sweet strawberry rhubarb filling, perfect for a gluten-free treat.

  • 1 1/2 cups gluten-free all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1/4 cup cold water
  • 1 cup strawberries, chopped
  • 1 cup rhubarb, chopped
  • 1/2 cup sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix gluten-free flour, sugar, and salt.
  3. Add cold butter and mix until crumbly.
  4. Stir in cold water until dough forms.
  5. Roll out the dough and cut into rectangles.
  6. In a saucepan, combine strawberries, rhubarb, sugar, cornstarch, and vanilla. Cook until thickened.
  7. Place filling on half of the dough rectangles, then top with remaining rectangles.
  8. Seal edges with a fork and cut slits on top.
  9. Bake for 20-25 minutes until golden brown.
  10. Let cool before serving.
