  • 1/2 cup gluten-free flour
  • 1/4 cup diced jalapeños
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated cheese (optional)
  • 1 egg
  • Oil for frying

Instructions

  1. In a large bowl, combine corn, gluten-free flour, jalapeños, cilantro, cumin, paprika, salt, black pepper, and cheese.
  2. In a separate bowl, beat the egg and then add it to the corn mixture.
  3. Mix until well combined.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the mixture into the hot oil and fry until golden brown on both sides.
  6. Remove from oil and drain on paper towels.
  7. Serve hot with your favorite dipping sauce.
