Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, blend the pistachio nuts until finely chopped.
  3. In a mixing bowl, combine almond flour, coconut sugar, baking soda, and salt.
  4. Add the chopped pistachios, honey, melted coconut oil, and vanilla extract to the dry ingredients.
  5. Mix until a dough forms.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Let cool before serving.
