- In a bowl, combine the dark rum, brown sugar, and cinnamon. Stir until the sugar is dissolved.
- Add the pineapple slices to the rum mixture and let them soak for at least 30 minutes.
- Heat coconut oil in a frying pan over medium heat.
- Remove the pineapple slices from the rum mixture and fry them in the hot oil until golden brown on both sides, about 2-3 minutes per side.
- Drain the fried pineapple on paper towels and serve warm.
