A delightful and unique dessert featuring pineapple slices soaked in rum and fried to perfection, perfect for spring gatherings.

  • 1 ripe pineapple, peeled and sliced
  • 1 cup dark rum
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup coconut oil (for frying)

Instructions

  1. In a bowl, combine the dark rum, brown sugar, and cinnamon. Stir until the sugar is dissolved.
  2. Add the pineapple slices to the rum mixture and let them soak for at least 30 minutes.
  3. Heat coconut oil in a frying pan over medium heat.
  4. Remove the pineapple slices from the rum mixture and fry them in the hot oil until golden brown on both sides, about 2-3 minutes per side.
  5. Drain the fried pineapple on paper towels and serve warm.
