Delicious and soft gluten-free red velvet cookies that are perfect for any occasion.

Ingredients

  • 1 ½ cups gluten-free all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • ½ cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the softened butter until smooth, then add the egg, red food coloring, and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If desired, fold in the white chocolate chips.
  5. Using a cookie scoop, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
