Delicious and fudgy brownies infused with refreshing mint, perfect for gluten-free dessert lovers.

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, whisk together the gluten-free flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix the melted butter and sugar until well combined.
  4. Add the eggs, vanilla extract, and peppermint extract to the butter mixture and stir until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in the chocolate chips.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before cutting into squares and serving.

Notes

  • For a stronger mint flavor, increase the peppermint extract to 1 teaspoon.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
