A rich and moist chocolate cake that is completely gluten-free, inspired by the beloved character Matilda.

Ingredients

  • 1 ½ cups almond flour
  • ½ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup honey or maple syrup
  • ½ cup coconut oil, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup dairy-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the almond flour, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together the honey (or maple syrup), melted coconut oil, eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. If using, fold in the dairy-free chocolate chips.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This cake can be frosted with a gluten-free chocolate frosting for added sweetness.
  • For a richer flavor, let the cake sit overnight before serving.
