- In a large bowl, combine the mashed potatoes, shredded cheese, gluten-free flour, eggs, green onions, salt, and pepper.
- Mix until well combined and the mixture is smooth.
- Heat oil in a frying pan over medium heat.
- Using a spoon, scoop out portions of the mixture and carefully drop them into the hot oil.
- Fry until golden brown on all sides, about 3-4 minutes.
- Remove from oil and drain on paper towels.
- Serve warm and enjoy!
