Delicious and easy-to-make gluten-free lemon-flavored Rice Krispy treats, perfect for spring desserts.

Ingredients

  • 6 cups gluten-free Rice Krispies
  • 1/4 cup unsalted butter
  • 1 package (10 oz) gluten-free marshmallows
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large saucepan, melt the butter over low heat.
  2. Add the marshmallows and stir until completely melted.
  3. Remove from heat and stir in the lemon juice, lemon zest, and vanilla extract.
  4. Add the gluten-free Rice Krispies and mix until well coated.
  5. Press the mixture into a greased 9×13 inch pan.
  6. Allow to cool before cutting into squares.
