Delicious and refreshing lemon blueberry bars that are gluten-free and dairy-free, perfect for a healthy dessert.

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, mix together the almond flour, coconut flour, baking powder, and salt.
  3. In another bowl, whisk together the melted coconut oil, maple syrup, eggs, lemon juice, and lemon zest.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 25-30 minutes or until the edges are golden and a toothpick comes out clean.
  8. Allow to cool before slicing into bars.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • These bars can be frozen for up to 3 months.
  • Feel free to substitute other berries if desired.
