  • 1/2 cup coconut flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 2 tablespoons dried culinary lavender
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, coconut flour, sugar, baking powder, and salt.
  3. Add softened butter, egg, vanilla extract, lemon zest, and dried lavender to the dry ingredients.
  4. Mix until a dough forms.
  5. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  6. Flatten each ball slightly with your hand.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
