- Preheat the oven to 350°F (175°C).
- In a bowl, mix the gluten-free graham cracker crumbs, sugar, and melted butter until well combined.
- Press the mixture into the bottom of a greased baking dish to form the crust.
- Bake the crust for 10 minutes, then remove from the oven and let it cool.
- In another bowl, beat the cream cheese until smooth.
- Add the key lime juice, powdered sugar, and vanilla extract to the cream cheese and mix until well combined.
- Spread the key lime mixture over the cooled crust evenly.
- Refrigerate for at least 2 hours to set.
- Cut into rolls and serve with whipped cream on top if desired.
