Delicious and refreshing gluten-free key lime pie rolls with a crunchy graham cracker crust.

Ingredients

  • 1 cup gluten-free graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup key lime juice
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Whipped cream for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the gluten-free graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of a greased baking dish to form the crust.
  4. Bake the crust for 10 minutes, then remove from the oven and let it cool.
  5. In another bowl, beat the cream cheese until smooth.
  6. Add the key lime juice, powdered sugar, and vanilla extract to the cream cheese and mix until well combined.
  7. Spread the key lime mixture over the cooled crust evenly.
  8. Refrigerate for at least 2 hours to set.
  9. Cut into rolls and serve with whipped cream on top if desired.

Notes

  • Make sure to use gluten-free graham crackers for the crust.
  • Adjust the sweetness by adding more or less powdered sugar according to your taste.
