- In a large bowl, combine the chopped kale, diced apple, and chopped walnuts.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey or maple syrup, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- If using, sprinkle feta cheese on top before serving.
- Serve immediately or let it sit for a few minutes to allow the flavors to meld.
